I understand that Canon made some usability change with the ISO controls access on the R5 mark 2, but I haven’t shot any Canon cameras recently, so struggling to give first hand advice there.

Looking at the Nauticam housing manual, I can see you’ve got 3 control dials (main dial, quick control 1, quick control 2). Two of these should be allocated to aperture/shutter speed, can’t you allocate one to ISO?
