I like the exposure much more now, and my preference goes to the shot with more negative space.

For that sort of photo, I think a centered subject works OK, especially if you go for symmetry (facing portrait). Your shots aren’t fully symmetrical, but I like the un-smiley look of the fish’s mouth, which you can still tell despite the shallow DOF.
